In the distance they could see a troop of soldiers headed their way. They abandoned their tea making to hide in the hills until the soldiers passed through. When the soldiers left the next day the villagers returned to find their green tea had turned black. They quickly dried the tea using pine branches, which created a lot of smoke. The smoke infused the tea. The villagers did not think the tea would sell but they put it on the market anyway. To their surprise the Europeans (Dutch at this time) really liked the tea and wanted more. Thus was born lapsang souchong. smoke is pretty gentle and is well-integrated with the tea.  Overall, it's quite smooth and cozy with the special kind of sweetness that smoked teas can bring.  And, since it's from AMBA, you can bet that it's clean and organic. \u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAMBA Estate, at about 1000 meters elevation in the Uva Mountains of Sri Lanka, is a very unique tea making operation.  The Estate is a re-claimed and regenerated abandoned tea farm that has been organically certified since 2009.  Many of the plants, both small and large leaf varieties, are old and grown from seed.  The plants are fertilized by a herd of rescued cows and are otherwise free from pesticides and chemical fertilizers.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eAMBA is community run, not
