Across the mountains of the Golden Triangle, from Yunnan down into Thailand and Laos, roasting or singeing tea leaves over a fire has long been one of the ways tea is prepared, sometimes during production, sometimes right before brewing. The old tea trees of northern Thailand belong to this same world, carried south generations ago by the same highland peoples.

We have rarely had the chance to carry tea from Thailand, so an expertly roasted sheng from older tea trees is a real treat, and easily one of our favorite finds this year. The roasting is done at a level of skill you would normally associate with an excellent charcoal-roasted Taiwanese oolong, and the first couple of steeps drink that way: round, nutty, notes of toasted hazelnut and almond, warm and approachable. But there is a sheng underneath, lightly staring back at you the whole time. As you move into later steeps, that raw puerh character steps forward, while the roast settles into the background.

It is a comforting, rounded, genuinely easy tea to drink, and it holds up across a long session. I could easily drink this every day.

Spring 2025 production.

//cdn.shopify.com/s/files/1/0654/2833/files/2025CharcoalRoastedChiangMaiRawPuerh_Thailand.webp?v=1779124827
dara-old-tree-green-tea-from-thailand
2026 Dara Old Tree Green Tea from Thailand

This green tea comes from Dara, a small family-run tea workshop at around 1,000 meters in the mountains of northern Thailand, between Chiang Mai and Mae Hong Son. Old tea trees grow in the forest around the workshop. In this area, trees like these are almost always used for miang, the fermented tea leaves traditionally eaten in northern Thailand, and Dara is the only workshop on the mountain making tea to drink.

The workshop was started about forty years ago by a man who came on foot from Yunnan and the woman he married in the village. It's named for their daughter, who runs it now. The processing draws on old methods from Yunnan, while the trees are cared for in the local miang tradition.

Leaves from old trees like these usually become sheng puerh, which is sun dried. Here they're made in the style of a green tea instead. After withering and a first fixing, the leaves are rolled and then dried in several rounds. Old tree green teas are made more often in Vietnam and are rare elsewhere in the region.

The aroma is warm and round, with notes of honey, lightly toasted nuts and raisins. The tannins build gradually, adding presence and mouthfeel, with a long finish and mineral notes. You can brew it like a sheng puerh, with boiling water and very short steeps for more structure, or like a green tea, with cooler water and longer steeps for a softer, silkier cup.

Late spring 2026 harvest.

//cdn.shopify.com/s/files/1/0654/2833/files/2026-dara-old-tree-green-tea-thailand-dry-leaves.webp?v=1793198246
wild-tree-raw-puerh-maocha-pha-hom-pok-thailand
2026 Wild Tree Raw Puerh Maocha from Pha Hom Pok National Park (Thailand)

This wild tree raw puerh comes from deep in the forest of Doi Pha Hom Pok National Park in northern Thailand, on the country's second highest mountain, near the border with Myanmar. The tea trees grow wild between roughly 1,500 and 2,000 meters.
