Yame Gyokuro Gin from Kogacha Gyo

Kogacha Gyo's Yame Gyokuro Gin comes from Yame in Fukuoka Prefecture, Japan's top producing region for gyokuro. Like all gyokuro, the tea is shaded before harvest, which holds back astringency and brings out the rich umami gyokuro is prized for. Expect a sweet aroma and a savory depth with a hint of nori. Give it plenty of leaf, cool water and a slow first steep, then enjoy several more infusions.

Gin, meaning "silver," is one of the gyokuros in Kogacha Gyo's Yame line. Founded in Fukuoka in 1938, the company is now led by fourth-generation tea maker Koga Kumiko alongside her parents. Gyokuro is the family's specialty, and they say they handle more of it than anyone in Japan.
